Oats and barley contain a special type of fiber called beta-glucan that helps lower cholesterol levels.  
 
Yield: 3 servings

Equipment: small pot with lid, 1-cup dry measuring cup, liquid measuring cup, table knife, large spoon

Ingredients:
1 cup quick oats
2 cups water

Directions:
1. Measure oats and set aside.
2. Measure water and pour into small pot. Place pot on burner. Turn burner to high heat. Bring to boil.
3. Add oats to pot. Stir once around pot. Place lid on pot.
4. Turn off burner. Allow pot of oatmeal to sit on burner for 5 minutes.

Serving: Divide oatmeal into 3 small bowls. Serve with your favorite additions such as soymilk, maple syrup, brown sugar, chopped dates, raisins, blueberries, ground flaxseed, sliced banana, or chopped apple. Eat with small spoons when oatmeal has cooled to desired temperature. It will thicken as it cools.

Notes: For thinner oatmeal, use more water. For gluten-free, use GF oats.
