Blueberry Jell recipe is from The Vegan Kitchen by Freya Dinshah. Available from AmericanVegan.org.
Dark blue/purple fruits and veggies such as blueberries contain a type of antioxidants called anthocyanins which have been shown to have protective effects throughout the whole body.
Yield: 1 lb. or 1½ cups (3 ½-cup servings)
2 cups blueberries
24 pitted dates (⅓ lb.)
Blenderize blueberries. Add dates, a few at a time. Blenderize until smooth. Put in jars. May be kept up to about 3 days if refrigerated. Other jams can be made, substituting other fruits for the blueberries: strawberries, peaches, apples, etc.
