FULL MOON DINNER
at Carême’s
Academy of Culinary Arts

Under the direction of their chef educator,
culinary students will prepare and serve a gourmet dinner.
You may choose to attend on Monday or Tuesday
Reserve early for this popular event

Dinner begins at 6:30 pm.
Kitchens Tour: 5:45 pm
Come at 530pm to view Book Table!

Dinner music by Jug Paradise, a Moongrass Americana string band
featuring George Blouin (mandolin, jugs), Morgan O’Connell (guitar),
and Ryan Young (bass fiddle).

MENU

Small plate: Assorted pickled vegetables; carrot, cucumber, radish, celery

Appetizer: Wood-fired Yukon gold potatoes and baby beets with sauce gribiche

Soup: Miso with lemongrass, shiitake, ginger, garlic, bean sprouts, tofu and bean threads

Salad: Rutabaga with charred onion, red quinoa, toasted macadamia, golden raisins, mesclun, roasted Granny Smith dressing

Entrée: Eggplant braciole stuffed with butterbeans and broccoli rabe, garlic smashed potatoes, wood fired tomato-basil sauce

Dessert: Vegan Cherries Jubilee
